Ingredients

300 g (about 10.5 oz) cooked smoked duck meat, 80 g (about 2.8 oz) garlic sprout strips.

Seasonings

Scallion, minced ginger, salt, chicken bouillon, yellow bean paste, cooking wine, Sichuan peppercorn salt, cornstarch, sesame oil, and vegetable oil, each to taste.

Steps

1. Tear the smoked duck meat into thick shreds, then mix with yellow bean paste, cooking wine, chicken bouillon, and cornstarch to coat evenly. Deep-fry in hot oil until golden brown, then remove and drain excess oil.

2. Heat oil in a wok until hot, sauté scallions and ginger until fragrant, add the shredded smoked duck and garlic chives, season with salt and chicken bouillon, stir-fry until well-flavored, drizzle with sesame oil, transfer to a serving plate, and serve with Sichuan peppercorn salt on the side.
