
Ingredients
200 g (about 7 oz) eel, 150 g (about 5 oz) yellow chives, 10 g (about 1/4 oz) cilantro.
Seasonings
5 g minced ginger, 5 g minced garlic, 1/2 teaspoon salt, 1/2 teaspoon white pepper, 1 teaspoon sugar, 2 teaspoons soy sauce, 1 tablespoon Shaoxing wine, 1/2 tablespoon cornstarch slurry, 1/2 tablespoon sesame oil, 3 tablespoons vegetable oil.
Steps
1. Slaughter the eel, wash and clean it thoroughly, then cut into fine shreds; trim and wash the chives, cut into small sections; wash the cilantro and chop finely.
2. Heat oil in a wok until hot, first add ginger and garlic and stir-fry until fragrant, then add eel and yellow chives and stir-fry to combine, then add cooking wine, soy sauce, sugar, salt, white pepper, and water slurry and cook until the flavors meld, then transfer to a plate, drizzle with hot sesame oil, and sprinkle with chopped cilantro before serving.
