
Ingredients
400 g (about 14 oz) chicken, 200 g (about 7 oz) potatoes, 3 g (about 1/2 teaspoon) diced onion.
Seasonings
Scallion sections, ginger slices, salt, MSG, sugar, curry powder, cooking wine, water starch, fresh broth, and vegetable oil, each to taste.
Steps
1. Wash the chicken, place it in a pot of water and cook until about 80% done, then remove and let cool before cutting into small pieces; peel the potatoes, wash, and cut into small cubes.
2. Heat oil in a wok, add onion, scallion, and ginger, stir-fry until fragrant, then add curry powder and stir well, remove from heat, strain to obtain curry oil and set aside.
3. Heat oil in a wok, add potatoes, salt, sugar, and cooking wine, stir-fry briefly, then add chicken pieces and fresh broth, bring to a boil, reduce to low heat and simmer briefly, thicken with a water and cornstarch slurry, transfer to a plate, drizzle with curry oil, stir well, and serve.
