Ingredients

1 whole duck, cleaned, 100 g (about 3.5 oz) preserved plums, 15 g (about 1/2 oz) cilantro, cut into sections.

Seasonings

Ginger slices, garlic slices, salt, chicken bouillon, sugar, ground white pepper, soy sauce, Shaoxing wine, stock, and vegetable oil, all to taste.

Steps

1. Bring water to a boil in a pot, add the duck along with salt, cooking wine, ginger slices, and garlic slices, then cook until the duck meat is tender and cooked through; remove and cut into pieces.

2. Place the plums and salt in a sealed container and let them sit for a period of time. Remove the plums, mash them, then add soy sauce, cooking wine, salt, pepper, sugar, and broth, stirring to combine into a plum sauce.

3. Heat oil in a wok until hot, add the plum juice and stir-fry, then add the duck pieces, broth, and chicken bouillon, stir-frying until well-seasoned, transfer to a serving plate and sprinkle with cilantro segments.
