Scrambled Tofu

Ingredients

400 g (about 14 oz) tofu, 100 g (about 3.5 oz) ground pork.

Seasonings

5 g minced scallion, 5 g minced garlic, 1/2 teaspoon each of salt, MSG, and Sichuan pepper powder, 1 teaspoon each of soy sauce and cooking wine, 1 tablespoon Sichuan broad bean paste, 2 tablespoons vegetable oil.

Steps

1. Rinse the tofu and press it into a paste using the flat side of a knife.

2. Heat oil in a wok over high heat, add the ground pork and stir-fry until it changes color and breaks apart, then add minced garlic, Pixian broad bean paste, and cooking wine, stir-frying until the oil turns red and fragrant.

3. Then add the mashed tofu and stir-fry until slightly dry. Add soy sauce, MSG, and salt, stirring well to combine. Drizzle with a small amount of oil for sheen, then sprinkle with chopped scallions and Sichuan pepper powder, stirring until fragrant and well incorporated. Serve immediately.
