Stir-Fried Beef with Young Ginger

Ingredients

Beef 200 g (about 7 oz), young ginger 100 g (about 3.5 oz), garlic sprouts 30 g (about 1 oz).

Seasonings

20 g pickled chili peppers, 10 g shredded scallions, 1 teaspoon each of salt and ground white pepper, a pinch each of MSG and soy sauce, 2 teaspoons Shaoxing wine, 3 tablespoons water starch, 2 tablespoons fresh stock, and vegetable oil as needed.

Steps

1. Wash and prepare all ingredients. Slice the beef, julienne the young ginger and pickled chili peppers, and cut the garlic sprouts into sections.

2. In a bowl, combine MSG, white pepper, salt, cooking wine, soy sauce, fresh stock, and water starch, stirring well to form a sauce mixture.

3. Heat oil in a wok until hot, add the beef slices and stir-fry to separate, then add shredded scallions, shredded chili peppers, young ginger, and garlic sprouts, stir-fry until well combined, pour in the seasoned sauce and cook through.
