Stir-Fried Beef with Chinese Broccoli (Gai Lan)

Ingredients

300 g (about 10.5 oz) tender beef and 300 g (about 10.5 oz) Chinese broccoli (gai lan).

Seasonings

a few slices of ginger, 1 tablespoon each of Shaoxing wine, soy sauce, and water starch, 2 tablespoons of oyster sauce, 1 teaspoon each of sugar and water starch, and 4 tablespoons of vegetable oil.

Steps

1. Rinse the beef and slice it thinly, then mix with cooking wine, soy sauce, and water starch, and marinate for 10 minutes; cut the Chinese broccoli into small sections, rinse, blanch in boiling water until tender, then drain.

2. Heat oil in a wok until hot, add the beef and quickly stir-fry until just cooked, then remove and drain the oil.

3. Heat the remaining oil in the wok, add ginger slices, Chinese broccoli, and beef, stir-fry until fragrant, then drizzle in oyster sauce and cornstarch slurry, add sugar, and stir-fry everything together until well combined.
