Shredded Pork with Sesame Seeds

Ingredients

500 g lean pork (about 1 lb), 25 g toasted sesame seeds.

Seasonings

10 g each of shredded scallion and minced ginger, 1 teaspoon salt, 2 teaspoons each of Shaoxing wine, caramel coloring, and sesame oil, 2 tablespoons sugar, a pinch each of MSG and star anise, 350 g (about 1 1/2 cups) fresh broth, and 500 g (about 2 1/4 cups) vegetable oil.

Steps

1. Rinse the pork and cut into thick strips about 10 cm (4 inches) long. Mix with shredded scallion, minced ginger, salt, and cooking wine until well coated, then marinate for 20 minutes.

2. Heat oil in a wok to 140°C (285°F), add the shredded pork and fry until light golden, then remove and drain the oil.

3. Add fresh broth, salt, sugar, star anise, caramel coloring, shredded pork, MSG, and sesame oil to the wok and stir-fry, then sprinkle with sesame seeds and serve.
