Ingredients

Smoked duck meat 450 g (about 1 lb), celery cut into sections 125 g (about 1/2 cup), garlic sprouts cut into sections 75 g (about 1/2 cup), young ginger julienned 50 g (about 1/3 cup), red chili pepper cut into sections 50 g (about 1/3 cup).

Seasonings

A pinch each of salt, sugar, and rice vinegar, 1 tablespoon Sichuan Pixian broad bean paste, 2 teaspoons soy sauce, and lard as needed.

Steps

1. Rinse the duck meat, pat it dry, and cut it into thin strips.

2. Heat oil in a wok until hot, add the shredded duck, ginger strips, and chili segments and stir-fry briefly, then add the broad bean paste and stir-fry until well combined.

3. Then add celery, garlic sprouts, soy sauce, salt, sugar, and rice vinegar, stir-fry until tender and well-seasoned, then drizzle with rice vinegar and serve.
