Cantonese-Style BBQ Pork Buns

Ingredients

Char siu (barbecue pork) and flour, both to taste.

Seasonings

Salt, Sichuan peppercorns, scallions, ginger, and soy sauce, each to taste.

Instructions

1. Cut the char siu (barbecue pork) into small pieces, finely mince the scallions and ginger, then mix with soy sauce and salt to form the filling.

2. Add sugar, warm water, and baking powder to the flour, let rest for 2 hours until the dough rises, then add sesame oil and white sugar.

3. Divide the dough into equal portions, roll each into a wrapper that is thicker in the center and thinner at the edges, fill with diced barbecued pork and minced scallion and ginger, shape into buns, and steam for 15 minutes until cooked.
