Ingredients
500 g white flour (about 1 lb), 300 g ground pork (about 10 oz), 100 g each of coated shrimp, coated diced chicken, and chive sprouts (about 3.5 oz each), 15 g shrimp roe (about 1/2 oz).
Seasonings
400 g cooked vegetable oil (about 50 g will be used), 15 g Shaoxing wine, 2 g fine salt, 1 g MSG, Sichuan pepper powder to taste, 15 g sesame oil.
Instructions
1. Place a wok over high heat, add cooking oil and heat to medium-low (about 30% hot), then add diced chicken and shrimp, quickly stir-fry to separate for about 10 seconds, immediately remove and drain the oil, let cool, then mix into the ground pork filling.
2. Wash the chive sprouts and cut into 1 cm (about 1/2 inch) pieces, then mix them into the meat filling along with the shrimp roe and Sichuan peppercorn powder to create the Three Delicacy filling.
3. Finally, knead the dough, roll it into a log, cut into pieces, flatten into wrappers, fill with the stuffing, and boil until cooked.
