Ingredients
500 g (about 1 lb) peanuts, 100 g (about 2 large) eggs, 50 g (about 1/2 cup) cornstarch.

5 g salt, 500 g (about 1 lb) vegetable oil.
Instructions
1. First, use a small amount of egg white to dissolve the bean starch, then add all the eggs and mix into an egg-starch batter; blanch the peanuts in boiling water, drain, mix with salt, then coat them in the egg-starch batter.
2. Place a wok over heat, add vegetable oil and heat to about 120°C (250°F), then add the peanuts and deep-fry until golden brown. Remove, let cool, and plate. This dish has a golden color and a crispy, aromatic flavor.
