Sweet Potato Pancakes

Ingredients

2 sweet potatoes, 2 eggs, 3 tablespoons flour.

Seasonings

Sugar and oil, to taste.

Instructions

1. Wash the sweet potatoes, cut them into two or three pieces depending on size, then steam them in a pressure cooker until tender, usually 10–15 minutes. While still hot, peel the sweet potatoes and place them in a ceramic bowl, mash them with a wooden spatula, gradually mixing in sugar and flour, and finally add the eggs.

2. Once evenly mixed, shape the dough into small portions, gently flatten them on a cutting board, then place in a pan with a modest amount of oil—sweet potatoes don't absorb much oil—and fry each side just once until cooked through.
