Ingredients
4 eggplants.
Seasonings
150 ml (about 2/3 cup) olive oil, 1 onion, 1 clove garlic, salt and pepper to taste.
Instructions
1. Cut 2 eggplants in half lengthwise, add garlic cloves, and steam until soft (or use a microwave). Then blend together with garlic cloves and onion in a food processor until smooth. Season with salt and pepper, and drizzle with 1 teaspoon olive oil.
2. Take 2 eggplants and slice them diagonally into thin pieces.
Heat oil in a flat-bottomed pan, then add the eggplant slices 3 at a time, frying each side for about 1 minute. 3. Remove and drain in a colander, then blot away excess oil with paper towels. Place a small amount of mashed eggplant between each pair of slices, then arrange on a plate and serve.
