Fruit Juice Rice

Ingredients

250 g standard rice, 250 ml (about 1 cup) milk, 200 g (about 1 cup) sugar, 100 g (about 3/4 cup) diced apple, 50 g (about 1/3 cup) diced pineapple, and 25 g each of diced candied dates, raisins, diced preserved plums, and chopped walnuts.

15 g each of ketchup and cornstarch.

Instructions

1. Wash the standard rice thoroughly, place it in a pot, add milk and enough water to cook into soft rice, then mix in 150 g (about 3/4 cup) of sugar until well combined.

2. Place the ketchup, diced apple, diced pineapple, diced preserved plum, diced candied dates, raisins, and chopped walnuts into a pot, add 300 ml (about 1 1/4 cups) of water and 50 g (about 1/4 cup) of sugar, bring to a boil, then thicken with cornstarch to make a mixed fruit sauce.

3. Spoon the rice into a small bowl, then invert it onto a plate and pour the mixed fruit sauce over the top. This dish is beautifully colored, with a sweet and fragrant flavor, and is rich in protein, carbohydrates, vitamins A, B, D, and C, as well as calcium, phosphorus, iron, zinc, niacin, and other nutrients.
