Ingredients
300 g (about 10 oz) ground pork, 3 g (about 1 teaspoon) ground white pepper, 2 salted duck eggs.
Seasonings
25 g cornstarch, 25 g light soy sauce, 25 g peanut oil, and 2 g MSG.
Instructions
1. Finely mince the pork, then add salt, MSG, the egg white from the salted egg, and potato starch, stirring vigorously until the mixture becomes sticky and elastic. Mix in some peanut oil, then spread the mixture flat in a plate.
2. Flatten the salted egg yolks and place them on top of the meat patty. Steam over medium heat until cooked through, then remove from the steamer.
3. Mix a small amount of broth or water with light soy sauce, then pour it over the meat patty and serve.
