Stir-Fried Rice Noodles

Ingredients

70 g rice vermicelli, 20 g pumpkin, 20 g shredded pork, 10 g dried shrimp, and cilantro to taste.

Seasonings

Oil-fried shallots to taste, 1 tablespoon curry powder, 1/3 tablespoon sugar, 1.5 tablespoons soy sauce, and pepper and water each to taste.

Instructions

1. Peel, seed, and wash the pumpkin, then cut into thin strips and set aside; heat oil in a wok, quickly stir-fry the shredded pork until cooked, then remove and drain; soak the rice noodles in hot water until soft, then drain and set aside.

2. Leave a moderate amount of oil in the wok and heat it over medium heat. Add the curry powder and stir-fry until fragrant, then pour in the remaining seasonings and stir well. Add the rice noodles, pumpkin, fried shallots, dried shrimp, and shredded pork in that order, and stir-fry everything together over low heat until evenly combined. Once the pumpkin is tender, transfer to a serving plate and sprinkle with fresh cilantro before serving.
