Instructions
1. Wash the red sweet potatoes, slice them into rectangular pieces, then cut crosswise into 0.1 cm (about 1/32 inch) thick slices. Soak in a mixture of 3 g alum and 90 g water for 30 minutes, then remove. Soak again in a mixture of 3 g salt and 225 g water for 30 minutes, then remove and pat dry. Place a wok over high heat, add oil and heat to 350°F (180°C). Deep-fry the sweet potato slices until golden brown and dry, then remove, drain excess oil, and transfer to a plate.
2. In a bowl, combine chili oil, salt, MSG, and sugar to make a sauce, then pour it over the sweet potato slices on the plate and serve. This snack features a golden-red color, a crispy and refreshing texture, and a savory flavor with a hint of spiciness.
