Ingredients
500 g (about 1 lb) noodles, 250 g (about 1/2 lb) bok choy or spinach, trimmed weight.
Seasonings
Soy sauce 100 g (about 1/2 cup), chili oil 75 g (about 1/3 cup), preserved mustard greens 50 g (about 1/4 cup), lard 50 g (about 1/4 cup), sesame paste 50 g (about 1/4 cup), scallions 25 g (about 1/4 cup), sesame oil 25 g (about 2 tablespoons).
Instructions
1. Use sesame oil to thin the sesame paste; finely chop the scallions into small pieces; wash the preserved mustard greens (or substitute with Tianjin preserved vegetable) and chop into fine pieces, then divide all the seasonings evenly among 5 bowls.
2. Cook the noodles in boiling water until done, add bok choy and blanch briefly, then drain and divide into 5 bowls to serve. This dish is savory and aromatic, with a slight saltiness and mild spiciness, and the noodles are smooth and tender.
