Sesame Seed Buns

Ingredients

300 g (about 2 1/2 cups) all-purpose flour, 2 teaspoons baking powder, 1/2 cup water.

Seasonings

1/2 tablespoon solidified lard, 1/3 cup sugar, 1/4 cup sesame paste, 1/4 cup cooked glutinous rice flour.

Instructions

1. Sift together the flour, baking powder, and sugar to ensure a fine texture, then rub in the lard, gradually adding water in batches while kneading until the dough becomes soft, cover with a damp cloth and let it rest for about 20 minutes to rise.

2. Mix the sugar, sesame paste, and cooked glutinous rice flour together to form the filling, then divide into 16 portions.

3. Knead the dough until smooth, then divide into 16 equal portions. One at a time, roll each piece flat on a work surface into a wrapper that is thinner at the edges and slightly thicker in the center. Place a portion of the sesame filling in the middle of the wrapper, then use your right hand to pleat and pinch the edges together to seal tightly. Place each bun on a small square of parchment paper, arrange them in a steamer basket, and steam over rapidly boiling water over high heat for 15 minutes until cooked through (note: steaming time will be longer on a home stove). Serve hot immediately.
