Spinach Pancakes

Ingredients

100 g all-purpose flour, 50 g spinach, 2 eggs, 10 g (about 2-3) peeled shrimp.

Seasonings

Salt, MSG, and salad oil, all to taste.

Instructions

1. Wash the spinach thoroughly and finely chop it; beat the eggs, then combine with the spinach, add flour, shrimp, salt, MSG (or omit), and water, mixing well to form a thick batter.

2. Heat oil to about 70% hot (moderately hot), pour in the batter and shape into a round cake about 15 cm (6 inches) across, then pan-fry over low heat until one side turns light golden, drizzle with a little oil, flip and fry the other side until light golden, then serve.
