Crispy Shredded Potato Pancake

Ingredients

2 potatoes, 4 eggs.

Seasonings

Oil, salt, scallions, and cooking oil, each to taste.

Instructions

1. Peel and julienne two large potatoes; finely chop the scallions.

2. Crack 4 eggs into a bowl, add the shredded potatoes, and stir to combine (add salt to taste).

3. Heat oil in a flat pan over medium heat, spread the prepared shredded potatoes evenly in the pan (do not use too high heat), once the pancake is set and golden on one side, flip it over and cook until the potatoes are fully tender, then transfer to a serving plate.
