Steamed Millet Flour Honey Cake

500 g millet flour, 50 g all-purpose flour, 100 g red adzuki beans.

1. Rinse the red beans thoroughly, then cook until tender and set aside.

2. Mix the flour with fresh yeast and plenty of warm water to form a thin batter, then let it rest to ferment. Once fermented, add the millet flour and knead into a soft dough, allowing it to rise fully.

3. Bring the water in the steamer to a boil, line the steamer with a damp cloth, add one-third of the kneaded dough, gently pat it flat with water-dipped hands, sprinkle half of the cooked red beans evenly over the top, add another half of the remaining dough and pat it flat, layer the rest of the cooked red beans on top, then finally add all the remaining dough, pat it flat with your hands, cover the steamer tightly, and steam over high heat for 15 minutes. This millet flour honey cake has a fine texture, fragrant flavor, and is soft and pleasantly light.
