1. Crack the eggs into a bowl and beat until smooth; heat a wok over high heat, use a clean cloth to spread a thin layer of peanut oil, pour in the egg mixture and swirl to form a thin omelet, then remove and cut into fine shreds; wash the garlic chives and cut into 2.5 cm (about 1-inch) segments.
2. Place a pot on the stove, add water and bring to a boil, then cook the egg noodles until done, drain and transfer to a bowl, and sprinkle with shredded egg crepe and garlic chive segments.
3. Bring the broth to a boil in a pot, skim off any foam, season with salt and MSG to taste, then drizzle with a bit of sesame oil and pour over the noodles.
