Small Cornmeal Buns

Ingredients

330 g fine cornmeal (about 11.6 oz), 75 g soybean flour (about 2.6 oz).

Seasonings

200 g (about 1 cup) sugar, a pinch of baking soda.

Instructions

1. Place the cornmeal, soybean flour, and sugar in a bowl and mix well. Gradually add warm water and baking soda water, kneading as you go. Once the dough is smooth, dip your hands in cold water, roll the dough into a log, divide it into small portions, and shape each portion into a small pyramid-shaped cornbread with a hollow center, smoothing both the inside and outside.

2. Place the finished cornmeal buns on a steamer rack, set them in a pot of boiling water, cover tightly, and steam over high heat for 15 minutes until cooked through. The steamed buns are golden yellow in color, soft and fluffy with a sweet fragrance, and rich in carbohydrates, protein, calcium, phosphorus, iron, niacin, and other nutrients.
