Chinese Chive Pancakes

Ingredients

500 g (about 1 lb) all-purpose flour, 500 g (about 1 lb) ground pork, 300 g (about 1 1/4 cups) cold water, 250 g (about 9 oz) Chinese chives.

Seasonings

Sesame oil, peanut oil, chopped scallions, minced ginger, salt, and MSG (or chicken bouillon) to taste.

Instructions

1. Finely mince the pork into a paste; chop the chives and mix with scallions, minced ginger, salt, MSG (or to taste), and sesame oil to form the filling. Combine the flour with cold water (add a pinch of salt), knead into a smooth dough, and let it rest briefly. Then knead the dough again, roll it into a long log, and divide into small pieces, about 2 pieces per 100 g (3.5 oz). Flatten each piece, spread with the meat filling, seal the edges tightly, and press into a small round patty.

2. Heat a flat pan, add peanut oil, place the small patties in the pan, and cook over low heat, flipping repeatedly until both sides are golden brown and the patties puff up, indicating they are done.
