Spicy Sauce Noodles

Ingredients

250 g (about 9 oz) noodles, 150 g (about 5 oz) diced pork, 40 g (about 3 tablespoons) yellow soybean paste, and broth as needed.

Seasonings

Chili flakes, chopped scallions, Shaoxing wine, sesame oil, lard, sugar, soy sauce, and MSG, each to taste.

Instructions

1. Heat a wok over high heat, add oil until it reaches about 80% hot, then add chopped scallions and chili flakes, frying until fragrant. Add diced pork and stir-fry briefly, then add yellow soybean paste and Shaoxing wine, continuing to stir-fry until the pork is cooked and the oil separates from the paste. Add sugar and a small amount of broth, stir-fry a bit longer, then add MSG and drizzle with sesame oil to finish the spicy sauce.

2. Cook the noodles in boiling water until done, then transfer to a large soup bowl and top with the spicy sauce before serving.
