Ingredients
1000 g cornmeal (about 2.2 lbs), 500 g chives (about 1 lb), 50 g dried shrimp (about 1.8 oz), 400 g soaked vermicelli noodles (about 14 oz).
Seasonings
Peanut oil, sesame oil, salt, fermented flour paste, and MSG (or chicken bouillon), all to taste.
Instructions
1. Wash and trim the chives, then chop them finely; rinse the dried shrimp in clean water and drain well; chop the vermicelli into small pieces. Place the vermicelli and dried shrimp in a small bowl, add salt, fermented flour paste, and MSG, and mix well. Place the chives on top, drizzle with peanut oil and sesame oil, then toss everything together until evenly combined.
2. Place a pot over high heat, add 750 ml (about 3 cups) of water and bring to a boil. Slowly sprinkle the cornmeal into the boiling water while stirring constantly with a spatula until well combined. Transfer the mixture to a work surface and let cool slightly, then knead it into a smooth dough. Roll the dough into a long log and divide it into 40 equal pieces. Flatten each piece, wrap with filling, and shape into large dumplings. Place the dumplings in a steamer and steam over high heat for 15 minutes. Serve with vinegar, soy sauce, or other condiments for dipping. These dumplings have a chewy outer skin and a flavorful, crumbly filling. They are rich in protein, carbohydrates, and also contain a variety of minerals, vitamins, and fiber.
