Ingredients
100 g bitter melon, 750 ml water.
Seasonings
100 g rock sugar, 5 g salt, 50 g (about 1/4 cup) short-grain rice.
Instructions
1. Remove the seeds from the bitter melon and cut it into small cubes; rinse the japonica rice thoroughly.
2. Place the glutinous rice in a pot, add water and bring to a boil over high heat, then add the diced bitter melon, rock sugar, and salt, and cook into a congee. This congee helps clear summer heat, cool the body, and brighten the eyes.
