Ham and Winter Melon Soup

Ingredients

50 g (about 1.8 oz) ham, 250 g (about 9 oz) winter melon, 100 g (about 3.5 oz) ham skin.

Seasonings

Vegetable oil, salt, MSG, and scallions, all to taste.

Instructions

1. Peel the winter melon, remove the seeds and pulp, wash, and slice into 0.5 cm (about 1/4 inch) thick pieces.

2. Place a wok over heat, add oil and heat until hot, then stir-fry the chopped scallions until fragrant. Add the ham skin and enough water, bring to a boil and skim off any foam, then cover and simmer for 30 minutes. Add the winter melon slices and cook until tender and soft. Add the ham slices and salt, continue cooking for 3-5 minutes, then add MSG (or omit), and transfer to a soup bowl to serve. This soup is savory and delicious, light and refreshing, and rich in high-quality protein, fat, vitamin C, and various minerals such as calcium, phosphorus, potassium, and zinc.
