Dried Shrimp and Winter Melon Soup

Ingredients

250 g (about 9 oz) winter melon, 15 g dried shrimp, 250 g (about 1 cup) stock or water.

Seasonings

10 g lard, 4 g salt, 2 g each MSG and chopped scallions.

Instructions

1. Rinse the dried shrimp in warm water to remove any sand and set aside; peel and deseed the winter melon, wash it, and cut into slices 4.5 cm long and 2 cm thick.

2. Place the pot over high heat, add the broth and bring to a boil, then add the winter melon, dried shrimp, and salt. Cook for about 10 minutes until the winter melon is tender, then stir in chopped scallions, MSG, and lard before serving. This soup is savory and delicious, light and refreshing.
