Hainan Coconut Cup (Coconut Shell Stuffed with Chicken and Coconut Milk)

Ingredients

1 large coconut, 100 g (about 3.5 oz) soaked white fungus (snow fungus).

Seasonings

100 g (about 1/2 cup) rock sugar.

Instructions

1. Peel the coconut, wash it clean, pierce through the coconut eyes to drain the coconut water, then saw open the bottom to form a coconut bowl. 2. Place rock sugar in a bowl and steam briefly, then pour it into the coconut bowl and steam for 1 hour. Add the soaked white fungus and coconut milk, then steam until fully cooked.
