Ingredients
5 g black fungus, 5 red dates, 100 g (about 3.5 oz) jasmine or short-grain rice.
Seasonings
Sugar to taste.
Instructions
1. Soak the black fungus (or white fungus) in warm water until softened, remove the tough stems and any impurities, then tear into small pieces. Rinse the japonica rice thoroughly and wash the jujubes. Place all the ingredients together in a pot with an appropriate amount of water.
2. Place the pot over high heat and bring to a boil, then reduce to low heat and simmer until the black fungus (or white fungus) is tender and the rice has cooked into a congee, then stir in the rock sugar syrup until dissolved. This congee nourishes yin and moistens the lungs, and serves as a supportive remedy for lung yin deficiency, consumptive cough, hemoptysis, and asthma.
