Corn Porridge

Ingredients

150 g millet (about 3/4 cup), 8 red dates (jujubes), 25 g candied orange peel (about 2 tablespoons), 1000 g water (about 4 cups).

Seasonings

2 liang (about 3.5 oz or 100 g) white sugar.

Instructions

1. Remove the pits from the red dates and chop them together with the candied orange peel into small rice-sized pieces.

2. Sift the millet to remove any chaff and impurities, rinse it thoroughly in clean water, then place it in a pot with fresh water. Bring to a boil over high heat, then reduce to low heat and simmer until the millet grains begin to bloom. Add red dates, candied orange peel, and sugar, and continue cooking until the porridge thickens. This congee helps nourish the kidneys, replenish yin, and clear heat and toxins. Additionally, aged millet is said to have a supportive effect in relieving diarrhea and calming restlessness.
