Bitter Melon Soup with Three Delicacies

Ingredients

500 g bitter melon (about 1 lb), 100 g each of rehydrated shiitake mushrooms and winter bamboo shoots, 1000 g (about 4 cups) fresh stock or broth.

Seasonings

Salt to taste.

Instructions

1. Slice winter bamboo shoots into thin pieces; remove the stems from shiitake mushrooms and slice them thinly.

2. Remove the stem and seeds from the bitter melon, then slice into thick pieces. Bring a pot of water to a boil, blanch the bitter melon slices briefly, then drain well.

3. Wash the soup pot clean and place over high heat, add oil and heat until it reaches 70% hot, add the bitter melon and stir-fry briefly, pour in the fresh broth, bring to a boil then add the winter bamboo shoot slices and shiitake mushroom slices, cook until tender, season with salt and serve. This soup is savory and delicious with a unique flavor.
