Rabbit Liver and Egg Soup

Ingredients

1 fresh rabbit liver, 2 red-skinned eggs, and cilantro to taste.

Seasonings

vegetable oil and salt to taste.

Instructions

1. Heat the oil until hot, add salt and an appropriate amount of water, then bring to a boil.

2. Rinse the rabbit liver clean, remove the gallbladder, and slice it into several pieces in the pot. Cook until the liver changes color, then add cilantro and a beaten egg, stirring to combine. Pour the mixture back into the pot and cook until done.
