Ingredients
1 young chicken, 50 g (about 1.8 oz) ginseng, 2 sprigs cilantro.
Seasonings
a few slices of ginger, half a tablespoon of ground fermented bean paste, and salt, sesame oil, and goji berries to taste.
Instructions
1. Heat 2 tablespoons of oil, stir-fry the ginger until fragrant, then add the chicken and fermented black bean paste, stir-fry briefly, then transfer everything to a clay pot and bring to a boil.
2. Add the ginseng and goji berries, then simmer over low heat for 40 minutes until the chicken is fully cooked. Thicken the sauce with a cornstarch slurry, garnish with cilantro and sesame oil, and serve directly in the clay pot.
