Ingredients
400 g (about 14 oz) white radish (daikon), 75 g (about 2.6 oz) ham.
Seasonings
10 g vegetable oil, and a pinch each of salt, scallion, and ginger.
Instructions
1. Wash and peel the white radish, then cut into thin strips; wash the ham and cut into thin strips; finely shred the ginger; mince the green onion.
2. Heat oil in a wok, add scallions, ginger, and shredded radish, stir-fry briefly, then remove. Place shredded ham in the same wok, add water to cover, bring to a boil, return the radish, and cook briefly before serving. This soup is clear and white, with a rich, savory flavor.
