Red Bean Congee

Ingredients

500 g (about 1 lb) red adzuki beans.

Seasonings

15 g cornstarch, brown sugar and osmanthus sauce to taste.

Instructions

1. Rinse the red adzuki beans, place them in a pot, and add water. Bring to a boil, then reduce the heat to low and simmer until the beans are tender but not yet bursting. Add brown sugar, then continue cooking over low heat until the beans are fully bloomed and soft.

2. Add osmanthus sauce, thicken with water and cornstarch slurry, stir well, and serve. This congee is sweet and pleasantly flavored, rich in protein, carbohydrates, various vitamins, and minerals. Red adzuki beans themselves have diuretic and swelling-reducing properties.
