Snow Chicken Soup

Ingredients

Chicken 500 g (about 1 lb), snow lotus 15 g.

Seasonings

75 g Codonopsis pilosula (Chinese bellflower root), 7 g Himalayan parsley root, 500 g (about 1 lb) pearl barley, 50 g each ginger and scallion, 3 g salt.

Instructions

1. Cut the Codonopsis pilosula and snow lotus into sections about 4 cm long; slice the ginseng and place them in a gauze bag, tying it tightly; rinse the coix seed in clean water, then place them in another gauze bag and tie it tightly.

2. After slaughtering the chicken, remove the feathers, gut it, and wash it clean; place it in a pot along with the tied herb bag. Wash and cut the ginger and scallions into sections, add them to the pot, first bring the soup to a boil over high heat, then reduce to low heat and simmer for 2-3 hours. Remove the chicken, cut it into chunks, and place in a bowl; scoop out the cooked Job's tears (coix seeds) and pour into the bowl, season to taste and serve. This soup yields tender, fall-apart chicken and soft, glutinous Job's tears, creating a smooth and refreshing texture with a rich, savory broth. It also serves as a supportive remedy for weakness-related impotence and irregular menstruation in women.
