Mung Bean and Winter Melon Soup

Ingredients

500 g (about 1 lb) winter melon, 500 g (about 1 lb) clear broth or stock, 300 g (about 10.5 oz) mung beans.

Seasonings

30 g scallions, 10 g ginger, and salt to taste.

Instructions

1. Rinse the mung beans thoroughly, discarding any floating skins, then place them in a soup pot and cook until tender; wash and crush the ginger, wash and cut the scallions into sections and add them to the pot; clean the pot, set it over high heat, pour in the fresh broth and bring to a boil, skimming off any foam.

2. Remove the outer skin, pulp, and seeds from the winter melon, wash it, then cut into chunks. Cook until tender but not mushy, then season with salt to taste. This soup is smooth and refreshing, with a savory flavor that's just right.
