Ingredients

1 pig trotter, 250 g (about 1/2 lb) raw peanuts, 50 g (about 1.75 oz) angelica root (dang gui head).

Seasonings

Salt, scallions, and ginger, all to taste.

Instructions

Clean the pig trotters thoroughly, wash the angelica root, then place them together with peanuts in a pot, add water, and simmer until the meat is tender. Season the soup with salt, scallions, and ginger to taste before serving.
