Yam and Tofu Soup

Learn how to make a comforting Yam and Tofu Soup with silken tofu, Chinese yam, and shiitake mushrooms.

Ingredients

1 box of silken tofu, Chinese yam (to taste), fresh broth (to taste), shiitake mushrooms (to taste), cilantro (to taste), and beaten egg (to taste).

Seasonings

Salt, MSG, chicken bouillon powder, white pepper, and water starch slurry, each to taste.

Instructions

1. Wash and finely chop the cilantro; wash and dice the shiitake mushrooms; peel and dice the Chinese yam into small cubes, then blanch in boiling water; cut the tofu into cubes the same size as the yam.

2. Add fresh broth to the pot, then add the cilantro, shiitake mushrooms, Chinese yam, and tofu. Season with salt, MSG, chicken bouillon, and white pepper. When the soup comes to a boil, thicken it with a cornstarch slurry until it reaches a rich, thick consistency. Drizzle in the beaten egg, sprinkle with chopped cilantro, and serve.
