Pork Rib and Potato Soup

Ingredients

1000 g (about 2.2 lbs) pork ribs, 500 g (about 1 lb) potatoes.

Seasonings

5 slices of ginger, 1 scallion, and Shaoxing wine, salt, and MSG to taste.

Instructions

1. Cut the scallions into sections; peel the potatoes and cut them into appropriately sized chunks; chop the pork ribs into small pieces, rinse clean, and drain well.

2. Blanch the pork ribs in boiling water for 5 minutes, then remove and rinse clean with cold water.

3. Add the scallions, ginger, pork ribs, Shaoxing wine, and enough water to cover. Bring to a boil over high heat, then reduce to low heat and simmer until the ribs are half-cooked. Add the potatoes and continue simmering until both are tender. Season with salt and MSG (or to taste), then remove from heat and serve.
