Carp and Bitter Melon Soup

Ingredients

400 g (about 14 oz) cleaned carp fillet, 250 g (about 9 oz) bitter melon.

Seasonings

Sugar, vinegar, salt, and MSG, each to taste.

Instructions

1. Pat the cleaned carp fillets dry with paper towels and slice them; wash the bitter melon, cut it in half lengthwise, remove the pith and seeds, blanch in boiling water, then drain and slice for later use.

2. Bring water to a boil in a soup pot over high heat, then add the fish slices and bitter melon slices. Season with vinegar, sugar, and salt, then simmer over low heat for 5 minutes. Add MSG and remove from heat. This soup is savory and flavorful with a unique taste.
