Chicken and Ham Turtle Soup

Ingredients

1 turtle (about 750 g / 1.6 lbs), 10 g chicken slices, 10 g ham, 1500 g (about 6.5 cups) clear broth.

Seasonings

Salt, MSG (or chicken bouillon), Shaoxing wine, scallion segments, and ginger slices, all to taste.

Instructions

1. After slaughtering the turtle, remove the internal organs, rinse clean, and chop into pieces. Blanch in boiling water to remove any blood, then discard the yellow fat and rinse off any foam. Place the pieces in a serving pot, pour in clear broth, add sliced chicken and ham, then season with salt, Shaoxing wine, scallion segments, and ginger slices.

2. Steam the seasoned softshell turtle in a covered steamer for about 30 minutes, then remove from heat, discard the scallion sections and ginger slices, and serve directly.
