Lamb and Winter Melon Soup

Ingredients

50 g lean lamb, 250 g winter melon (about 1/2 lb).

Seasonings

6 g sesame oil, 3 g each of soy sauce and salt, 2 g MSG (or omit), 2.5 g each of scallion and ginger, and 15 g vegetable oil.

Instructions

1. Slice the lamb into thin pieces and marinate with soy sauce, sesame oil, salt, MSG (or omit), scallions, and ginger; peel the winter melon, wash, and slice into pieces.

2. Heat a wok over high heat, add vegetable oil and heat until hot, then briefly stir-fry the winter melon slices, add a small amount of water, cover and bring to a boil, then add the mixed lamb slices and cook until done. This soup is light and clear with a delicious flavor, rich in protein, fat, calcium, phosphorus, iron, zinc, vitamin C, and other nutrients.
