Pumpkin Purée Soup

Ingredients

1000 g (about 4 cups) beef broth, 250 g (about 1 cup) pumpkin, 25 g (about 2 tablespoons) oil-blended flour, 15 g (about 1/4 cup) fresh cilantro.

Seasonings

Salt and pepper to taste.

Instructions

1. Wash and finely chop the cilantro; wash the pumpkin, peel and slice it, then cook in beef broth until tender, pass through a sieve to make a puree.

2. Add the pumpkin purée to the beef broth, stir until well combined, and bring to a boil. Whisk in the flour sautéed in oil to thicken to a light creamy consistency, then season with salt and pepper to taste. Sprinkle with chopped cilantro and serve. This soup is fragrant, rich, and uniquely flavorful.
