Ingredients
250 g (about 9 oz) glutinous rice, 250 g (about 9 oz) strawberries, and 100 g (about 3.5 oz) mung beans.
Seasonings
Sugar to taste.
Instructions
1. Pick over the mung beans to remove any impurities, rinse them clean, and soak in fresh water for 4 hours; wash and trim the strawberries.
2. Rinse the glutinous rice clean, then place it in a pot along with the soaked mung beans. Add enough water, bring to a boil over high heat, then reduce to a low simmer and cook until the rice grains bloom and the mung beans are tender. Add the strawberries and sugar, stir to combine, and cook for a short while longer. This congee is vibrant in color, pleasantly sweet and fragrant, and rich in protein, calcium, phosphorus, iron, zinc, vitamin C, vitamin E, and other nutrients.
