Instructions

1. Rinse the pork and slice it thinly, then lightly marinate with salt, Shaoxing wine, chopped scallions, and shredded ginger; remove the lotus root joints, peel, rinse, and cut into diamond-shaped slices.

2. Place a wok over high heat, add 1 tablespoon of oil and heat until hot. First, stir-fry the marinated pork slices briefly, then add the lotus root slices and stir-fry together. Pour in enough water, then add the dried shiitake mushrooms, Shaoxing wine, and sugar. Bring to a boil, season with salt and MSG to taste, then serve. This soup is deliciously savory with a pleasant sweet and sour balance.
